Bio & Bikehotel Steineggerhof (Italy – South Tyrol)

The motto of the Bio- & Bikehotel Steineggerhof: “Avoid what can be avoided. Reduce what cannot be avoided. Compensate for what cannot be reduced.” In 2019 the Bio- and Bikehotel Steineggerhof became the first climate positive hotel in South Tyrol. This means that they have not only compensated the 48 tons of CO2, through a climate protection project, but doubled that amount, so 96 tons of CO2. They were able to reduce their CO2 emissions in 2017, from 7,30 kg per night to 4,43 kg. By comparison, a conventional hotel measures an emission of over 40 kg per night! Economy of the common good.
The Economy of the Common Good considers the environment and well-being of people in all economic activities. The focus is not on maximizing profits but on social justice and ecology. A “good life for me” becomes a “good life for all”. Here you can find more information about the Economy of the Common Good (ECG): https://www.ecogood.org/. The Bio- and Bikehotel Steineggerhof is peer evaluated and has the economy of the common good certification.
Social sustainability.
Social sustainability is about identifying and managing business impacts, both positive and negative, on people. The quality of a company’s relationships and engagement with its stakeholders is critical. Directly or indirectly, companies affect what happens to employees, workers in the value chain, customers and local communities, and it is important to manage impacts proactively. The Bio- and Bikehotel Steineggerhof offers the following measures within the area of social sustainability:
· Flexible working hours
· Part-time, 5 or 5,5 workdays a week
· Good and fair pay
· Local employees, 1 refugee has been living with them for the past 5 years
· Economy of the common good certification
· Audit familieundberuf
· Cooperation with companies from South Tyrol
· Support through donations: Magdalena Gschnitzer, World Bicycle Relief’s reforestation project in Uruguay, ZEBRA, Vinzensverein
· Talks and cooking lessons on “vegan cuisine and sustainability in hospitality”
CO2-Reduction.
Lisa Resch from the Hotel Steineggerhof explained that over 91.000 tons of CO2 could be saved if all South Tyrolean hotels cooked like the Hotel Steineggerhof (mostly vegan) which equals flying around the world 6.445 times.
Green cuisine.
95 % of all the dishes served in the Bio- & Bikehotel Steineggerhof are only plant based! Once a week they organize a “Veggie Day” and serve only vegan dishes. By cooking mostly vegetarian and vegan a lot of resources can be saved. In addition, the Bio- and Bikehotel Steineggerhof bys 65 % of their fruits and vegetables locally from South Tyrol. 100 % of their eggs are local eggs and 95 % of their wines are local wines. The Bio- & Bikehotel Steineggerhof has published two vegan cookbooks with a lot of inspiration in the vegan cuisine. Summing up.
Lisa Resch cited Dirk Müller, Chief Editor “Vegan für mich”: “The next generation will ask us: What have you done?” This can be framed either positive or negative, depending on which activities we do for our next generations – let’s start doing something for our next generations!

Hotel Der Stern (Austria)

The sustainable family hotel Der Stern was founded in 1509 and is run by René Föger and his family in the 20th generation. René Föger completely turned things around when he took over the hotel in 2004: he has put sustainability at the heart of everything he does and is a pioneer when it comes to sustainability in Tyrol. In the following, we would like to present a fraction of the sustainable measures taken by Hotel Der Stern.

Eliksir is a unique combination of a restaurant, cocktail bar, independent event space and cigar room located in Wrzeszcz, near the center of Gdansk. Food pairing is the main concept of Eliksir.

Vulkanlandhotel Legenstein (Austria)
Julia Legenstein
The 4-star feel-good hotel is located in the middle of the Styrian volcanic region, in Bad Gleichenberg, and delights guests with its excellent cuisine, modern and well-equipped hotel facilities with wellness area and many favorite places. By participating in the sustainability project ETSM2030 they set another mile stone on their way to the Green Legenstein.

Weihrerhof (Italy)
Klaus Pichler
Weihrerhof goes Green. The Hotel Weihrerhof is located directly the Wolfsgrubner lake on the Ritten and at the same time very close to the seven hectares of the hotel's own forest and green meadows meadows, which also belong to the also belong to the hotel. For over 20 years the surrounding nature has not been cultivated. So the flora and around the hotel are visibly and noticeably original, healthy, intact and powerful. The Weihrerhof is run by the Pichler family in the second generation - and with particular carefully and passionately.
